Kitchen Team - Chef Couple – Aravis Lodge

We have an opening for an experienced Kitchen Chef Team (couple or
2 friends) to run our Aravis Lodge kitchen during the coming winter
Ski Season, The 40 person chalet is located in the small village of
St Jean de Sixt, near the ski resorts of Grand Bornand and La Clusaz.
With over 220km of pistes the resorts are popular with our returning
British guests, but are still predominantly French, meaning you won’t
be based in a ‘mini-Britain’ as you are in some of the bigger
resorts.
All our staff need to be efficient, flexible and conscientious in their
approach to work. To get the most out of a ski season you'll need to
be prepared to work hard, be energetic and love working with people.
The ski season is a fantastic way to spend the winter and although the
hours can be demanding and long, your rewards include plenty of time
on the mountain side, meeting lots of new people and our great benefits

In the role of the Kitchen Chef Team (2 people) you will have responsibility
for the operation of the kitchen and the preparation of all meals in
the chalet. 6 days a week we provide breakfast , afternoon tea and a
3 course dinner for up to 45 guests and 15 staff. You will be assisted
by the Kitchen Assistant and will be supported by other chalet team
members.
In addition you will take full responsibility for the ordering, stock
control and overall operation and cleanliness of the kitchen. This role
requires previous experience of working in professional kitchens with
similar quantities and a proven track record of delivering a quality
menu, using plenty of fresh ingredients and working to a tight budget.
This position is aimed at a couple (or 2 friends) who have a track
record of having worked together in the kitchens and delivering quality
meals in a high-pressure environment. At least one person will need
to be a driver and similarly at least one person must have a good working
command of French for ordering and dealing with suppliers.
Meals and food are an important part of the chalet experience and
you will play a key role in ensuring that guests are well served - meeting
the various dietary needs (vegetarian, coeliac, allergies etc) and providing
hearty, healthy, varied and interesting meals to a consistently high
standard.
Although you have flexibility to manage your daily working pattern
you can generally expect an early start for breakfast but would be finished
by mid-morning, followed by the afternoon off. Evening duties of dinner
service will complete your day. A full day off is taken mid week. You
will receive a competitive salary (determined by experience) in the
range of 140-180€ week each (after tax). Your accommodation will
be a comfortable apartment close to the lodge and will be fully furnished
and equipped.
The season will begin on 10th December 2010 and run until Mid-April
2011 although we would ideally like the chefs to start before this and
prepare their kitchen, supplies etc.
